Pesach 5787 begins on the evening of Wednesday 21 April 2027 and ends on 29 April 2027, with the first Seder on the night of 21 April.
Most programs run the full eight days, arriving on 21 April and departing on 29 or 30 April. Many also sell a shorter first-days or second-days option, which is worth asking about if the full eight days is more than you want or more than you can afford.
Because these dates are fixed years in advance, the calendar is never what constrains a booking. Availability and flights are.

January 2027 — family rooms start to disappear

April 2027 — the gamble
Late discounts on unsold rooms are real but they are a gamble, and they only work for families flexible on destination and not needing a specific room configuration.
Late discounting does happen on unsold inventory. It is a genuine gamble: you need the right program to have the right room category left, at the point when airfares are at their annual peak. Families who have flexibility on destination sometimes do very well here. Families who need three connecting rooms do not.
What actually sells out first
Connecting rooms and family suites go first, everywhere, followed by the established programs, Israel as a whole, and anything with a strong children's programme.
In rough order:
- Connecting rooms and family suites — always, everywhere
- The most established programs at the best-known properties
- Israel over everywhere else, because it sells to a local and an international market simultaneously
- Anything with a strong children's programme, once word gets round
- Sea-view and upgraded categories at resort properties
Standard rooms at less famous programs are usually available far later than people expect.
Flights are the other half of the problem
No program rate includes flights, and at Pesach fares they peak in both price and scarcity — so for a long-haul family the flight usually decides the destination, not the other way round.

A practical order of operations
Set a total budget including flights, shortlist three or four programs, price the flights before committing, then book both together.
